Hello everyone i come back with a nice tasty recipe of eggplant stuffed with rice cheese chicken , i have a beautiful memories where i ate this recipe for the first time since about 3 or 4 years it was a family event , that’s why i love it , i call it also eggplant cake , it’s like a cake right ! so lets see how to prepare it , as usual with me step by step until getting the result .


Cook time :

Rice time cook : 15 min

Fry the eggplant : 15 min

Cooking tomato sauce : 15 min

Cooking chicken : 15 min

The final recipe time to cook : 20 minutes

Total : almost 1 hour

Number of pieces : 20 pieces

Ingredients :

-          Chicken breast or minced meat .
-          2 medieum tomatos .
-          2 medieum eggplants .
-          Piece of cheese .
-          4 eggs .
-          1 cup of rice .
-          Salt .
-          Cumin .
-          Red pepper .
-          Black pepper .
-          Ginger powder .

How to prepare :

-          First we bring our two eggplants and wash it .



-         - Then we cut the top of eggplant .




-          -And we begin cutting it lengthwise and not crosswise as shown in the picture below in order to have large pieces to spread it in the mold .





                                                                                                            -Then we put our cutted pieces of eggplant in a bowl and wash it we drain it from excess water and we add salt and we put it another time to drain . ( i will tell you later why we do this step ) .








-        -  Now we bring our chicken breast . 


-we cut into big pieces just to facilitate chopping process and we chop the chicken using a robot .




or chopping machine until get minced chicken .




-        -  Now we take a cup of rice just a little cup .



 -and we put it container to boil with triple of rice water with a tsp of salt .

-        -  Another step to do is to bring our two tomatos we wash it look they are making a photoshoot XD .



-          - And we grate it . 

-          - We add salt , black pepper , red pepper , cumin .




-        -  And we make it in frying pan with a small amount of oil . 




-        -  And when it’s ready after almost 10 minutes we remove it from heat and we put in inside we will need it later .



-       -   We bring our minced chicken we add : salt , ginger , black pepper . 



 -and we cook it simply in a frying pan too with a very small amount of oil too .

- we go back to our eggplants . 






-       -   Now when we remove the eggplant from the refinery . 
 look what we will find 




-          That’s why i told you to add salt and let it for a time to get rid of eggplant water and this step will help us when we fry the eggplant so as not to absorb too much oil .

-         - So we put our eggplant in fryingpan in high temperature and around half cup of oil . 




-         - When we remove it we put it directly in oil absorbing paper
-          I did this step to remove oil . 



-          - And we bring our mold . 



-          - We put the eggplant in this way look it’s so funy it’s like friends who are siting . 


-          - the group is completed we cover all the mold with eggplants .



-          - we bring the eggs look at the forth it’s tall .



-          - We bring a recipient we add 4 eggs .  



- We whisk the eggs  and we add the piece of cheese ( it’s preferable to use grated cheese but it’s okay )and we mix it with the eggs .



-          in this step i would add the canned tuna but my mother came and she told me i don’t like so i canceled this step .




-         - We add the rice , look how it’s look nice the colour of eggs and rice yellow and white .



- We mix .



-         - we add our tomato sauce why we add the sauce because it turn the recipe homogeneous and not dry .






-          - We add the chicken . 



-          - we add the mixture to the mold .


-        -  And we close with the eggplants i confess i bring the third eggplant because when i fry it in the begining i was hungry and i ate 5 or 6 pieces of fried eggplant XD that’s why when i would close the mold with eggplants i did not find enough piececs so i bring another .




-          - And we enter it in the oven just for 20 minutes untill the egg coocked because all the others ingredients are cooked . 
-          - And finally it’s ready now we turn the mold into the dish and we cut it using a knife .
